Playing "Fill in the Blanks" with Other People

It's like Mad Libs, but not in a leisurely context. Sometimes, people who ask me something forget what they meant to say mid-sentence. Sometimes they just hem and haw, and sometimes they say "thing" and expect me to know what "thing" they mean. I'm not just guessing at what people want from me and interrupting them (at least not that often). Is what I'm doing a sign of poor etiquette?
